Ingredients
1 package (12 ounces) Johnsonville Brown Sugar & Honey Breakfast Sausage
1 package (20 ounces) refrigerated hash browns
1/4 cup melted butter
1 cup halved cherry tomatoes, or leave em' on the vine if you are feeling fancy
2 tablespoons sliced green onions
5 large eggs
Directions

1) Preheat oven to 425°F.

2) Cook sausage according to package directions; set aside and keep warm.

3) Spray a 10x15-inch baking sheet with non-stick cooking spray.

4) In a bowl, combine hash browns and butter; sprinkle with salt and pepper.

5) Spread hash brown mixture on baking sheet; bake 20-25 minutes and turn hash browns once.

6) Arrange sausage on baking sheet, return to oven for 5 minutes.

7) Add tomatoes and onions. Crack eggs over potatoes; sprinkle with salt, pepper and green onions.

 

8) Bake until eggs are set; about 5 minutes.
